At an altitude of 400 meters, at the foot of the Sierra Morena, is Villanueva de la Reina. In Jaén. Since the 19th century, Casa del Agua and Oro Bailén have been producing their fruity and subtle olive oils.
The harvest, done in November, is semi-manual, as the olive picking is done with specific machinery, consisting of vibrating the trunk so that the fruit comes off earlier and in larger quantities, aided by manual beating, followed by a large workforce for its collection in bundles and subsequent loading onto trailers that will transport the olives quickly to the mill.
Being an oil harvested in November, it cannot be considered either early harvest or mature harvest. Therefore, it is in a middle term that is highly appreciated by olive oil lovers.
Olive oil that stands out for its medium intensity fruity flavor, with a similarity of intensity in both green and ripe nuances at its optimum point, reminiscent of fruits like tomato or almond. In the mouth, it has a sweet entry, with a delicate and light bitterness, accompanied at the end with a touch of spiciness, both in perfect balance, very harmonious and with a medium-low intensity.
Intense fruity flavor, with a medium bitterness and medium spiciness.
