Hand-picked at the exact point of ripening. Manual destemming. Fermentation at 22 ºC with programmed pumpovers.
AGING
3 months in new French oak barrels (Allier) of 300 Liters. The rest in bottle.
VISUAL
Dark red color of ripe cherry with clear edges of high intensity, with silky sensations in the mouth.
OLFACTORY
Well-integrated red fruit aromas with the acquired aromas during the aging process that the wood provides: balsamic notes like vanilla, nuts, and toasty aromas.
GUSTATORY
Balanced and complex. Exact concentration of well-integrated fruit, soft and persistent tannins. A long and glyceric amplitude.
PAIRING
It can accompany stews and red meats, roasted pork and lamb. All types of cheeses and cured meats, grilled vegetables. It is suitable for drinking by the glass.
