Tasting sheetPRODUCTION AND VINIFICATION
Hand harvested at the exact point of ripeness. Destemmed on a table after strict selection. Fermented at a temperature of 22 ºC with vigorous pump-overs and dry racking.
AGING
12 months in new French oak barrels (Allier) of 300 liters. The rest in bottle, about 4 months.
VISUAL
Dark red color of ripe cherry with clear edges of high intensity that anticipate its fine and fruity flavor.
OLFACTORY
Mature red fruit well integrated with the aromas derived from the aging process that the wood provides: balsamic notes such as vanilla, dried fruits, toasted and roasted aromas like tobacco.
GUSTATORY
Balanced and complex. Precise concentration of well-balanced fruit with lively acidity and smooth and pleasant tannins. A long and aromatic breadth; a wine that invites you to keep drinking, due to its prolonged finish.
PAIRING
It can accompany meat and fish stews. Offal. Red meats and game, hearty roasts, pork and lamb. Rice dishes with a variety of seafood and vegetables. All types of cheeses and cured meats, grilled vegetables. Ideal for having a glass during the aperitif.
Due to its strict production, Ingenia "Selección" becomes a unique wine that acquires its character from the winemaking tradition of the Vega de Madrid. And it joins the emerging wines that surprise since their appearance.
