The winemaking process begins with a meticulous manual selection of the best bunches of grapes from three old vines aged between 35 and 40 years old, located north of Lapuebla and south of Laguardia in Rioja Alavesa.

Fermentation takes place in stainless steel tanks at temperatures between 28ºC and 30ºC for 7 days, followed by an additional maceration of 10 days. Malolactic fermentation takes place in large oak barrels, being 70% French oak, 15% American oak and 15% Hungarian oak, for 25 days.
