92/300 Syrah, is an aged wine. As its name suggests, it has been made with the Syrah variety. The name comes from the 92 barrels where the wine has rested for more than 300 days. The wine has a better evolution in Magnum bottles
To make the 92/300 Syrah wine, the grapes are harvested at night, to take advantage of the lower temperatures and thus slow down the enzymatic processes.
The wine is fermented with indigenous yeasts, at a temperature between 22º and 24º. The wine rests 12 months in steel tank, to move to French and American oak barrels, where the wine rests for 16 months, with three minimum rackings.
92/300 Syrah, has has a crystalline appearance and ruby red color, with a medium-high layer.
On the nose, it shows clean and intense aromas, ripe black fruits, spicy and truffled aromas, on a fine bed of toasted aromas provided by the wood of the barrel (The variety of Syrah, does not take much of the aroma of the wood.)
Very good entry and passage through the mouth, spicy flavors appear again, with an excellent texture and mineral background.
Ideal for spoon dishes, for stuffed pasta and all kinds of stewed meats or grilled. Likewise, it perfectly accompanies a great variety of cheeses.
