González Byass Wineries was founded in 1835 and currently owns 1,844 hectares of vineyards distributed throughout Spain. Their wine production satisfies both national and international palates.
González Byass Wineries rescues the sherries from the depths of their cellars, "infinite in age, but finite in life".
The Matusalem Generous Wine has a D.O. Jerez and Manzanilla, and it has been made with 75% Palomino and 25% Pedro Ximénez grape varieties.
The wine is aged in American oak barrels and has an aging process of over 30 years.
For the production of the Matusalem Generous Wine, the grapes are handpicked to guarantee their optimal condition until they reach the machines.
When the grapes arrive at the winery, they are carefully pressed without crushing the stems, seeds, and skin. This juice, extracted from the first light pressing, is called "yema" or "yema must".
