Selection of the best hand-harvested vineyards and placed in boxes so that the clusters arrive whole, healthy and in optimal conditions for their elaboration. Vinification is carried out at a controlled temperature of 26-28 °C and macerated for twenty days, the necessary time to obtain a wine with an appropriate level of color and polyphenolic substances. Aging in French oak barrels for 14 months until bottling starting in March 2010. It is a very intense red wine. It has a fairly intense cherry color with a slightly violet rim. On the nose, there is a fine aroma of very ripe black fruits that mix with the toasted notes (vanilla, spices, etc.) contributed by the barrels, making it a rather complex aroma. On the palate, we will find a balanced, meaty, ripe wine with a taste of candied black fruits with notes of licorice and quite mineral; in addition, we can say that it has very ripe tannins that integrate into the structure of the wine, giving a pleasant and persistent aftertaste that, combined with the oak of the barrels, adds a remarkable complexity that will improve during its time in the bottle. Pairing: Ideal for white and red meats, lamb, game, poultry, rice dishes, and aged cheeses. It should be served at a temperature of 18-20 °C. A favorable evolution of the wine is expected over the next 6-7 years.
