This EVOO is the result of one day of harvesting, elaborated with the fruit of the verdeja variety selected from the highest altitude organic olive grove, located in the Altomira Valley. Pure juice of intense and complex fruitiness with the presence of grass, green apple and walnut, fresh in the mouth, with medium bitterness and spiciness and good persistence. Extraction methods are applied with extremely short beating times and very low temperature, thus extracting the juice from the fruit at its most intense organoleptic qualities with the least possible deterioration. 100% natural. The bottle is numbered and has a certified laboratory measurement of the amount of biophenols and oleochanthal present in the oil, a guarantee that the EVOO contains the vitamins and antioxidants so special that high quality olive oils can offer to our health
  • EARLY OIL HARVESted in OCTOBER. Olive groves of traditional cultivation. Our recovered olive groves, scattered in small plots in the Sierra de Altomira, are all organically grown and of a unique and native variety of the natural region of the Alcarria: the Verdeja or Castellana variety.
