Production and Aging

Pago de Cirsus Cuvée Especial is composed of the grape varieties Tempranillo, Merlot, and Syrah, which are manually harvested in 15-kilogram boxes. The Tempranillo and Syrah varieties are harvested in the first weeks of October, and the Merlot variety in the first week of September.

The grapes are macerated at a temperature of 5ºC and undergo alcoholic fermentation in French oak vats. This wine undergoes an aging process of 14 months in new French oak barrels.
