Pazo da Sinsela San Clemente is a white wine made from Albariño in the D.O. Rías Baixas by the Pazo da Sinsela winery by winemakers Rodrigo Méndez and Raúl Pérez.
Pazo da Sinsela has its origins in a vineyard located in the heart of the Salnés Valley in Galicia. These vineyards extend over 3 hectares of land, where old vines grow on granitic, alluvial and clay soils. The Atlantic climate present in the region provides an invaluable freshness to the Albariño variety. It is precisely from this region that Pazo da Sinsela San Clemente emerges, a white wine that is the result of careful, creative and respectful work in harmony with the terroir.
In the winery, fermentation takes place naturally with indigenous yeasts, using barrels of different sizes (225, 300 and 500 litres) and reusing some of them. Finally, the wine undergoes an ageing period of 12 months, mostly in barrels of different sizes and uses, while a small part is aged in a 1,500-litre foudre. All this contributes to the complexity and uniqueness of Pazo da Sinsela San Clemente, a white wine that reflects the essence of the terroir with mastery.
