Cañón is one of our most significant cheeses. It takes its name from the town where our factory is located, La Cavada, where the Royal Artillery Factory was located, which since the 17th century became the major producer of this product. And, of course, because it's amazing! It is a cow's milk cheese that contains vegetable ash inside. Its paste is compact, closed, sometimes with small eyes regularly distributed, but buttery and melting.

It provides a unique aroma and flavor of nuts with a residual taste of sweet cream, moving around its creaminess and smoothness. Our Cañón Cheese has won the following awards: Silver Medal at the World Cheese Awards 2023.
