Cheese born from the synergies of two cheese factories in Cantabria, made by La Pasiega de Peña Pelada and aged in the natural cave Cerréu de Tresviso of Quesería Javier Campos. The cave gives its name to this cheese that has a bit of the Pasiego and Lebaniego spirit.
Smoked cow cheese with a moldy rind, with an ivory white paste with a buttery and tender texture. Slightly smoked flavor with toasted notes, the molds and yeasts that grow on its rind during the aging process give this cheese a greater complexity, where a smoky touch appears slightly at the end to give an extra touch to this cheese, without masking any of its qualities.
It has a medium intensity smoked scent of mushrooms, cave, and humidity. Both the Vaca and Ahumado will remind you of the best cow cheeses from the French Alps.
