Mezzi Rigatoni pasta is made with the best 100% Italian durum wheat semolina and spring water from Monti Lattari. It is a shorter variant of the classic Rigatoni, typical of the Roman tradition, also characterized by the grooved outer surface and by the large diameter and thickness. The extrusion of the dough through the bronze die and the peculiar process of drying at low temperature give the pasta a very rough surface , capable of enhancing the seasoning and keeping the aroma of the wheat intact.
