Pol Roger Vintage Rosé is based on Brut Vintage (60% Pinot Noir, 40% Chardonnay) to which they add, before bottling and secondary fermentation, approximately 15% of red wine (Pinot Noir) from the best crus of the Montagne de Reims.
The must undergoes two rackings: the first immediately after pressing and the second cold, in stainless steel tanks at 6 degrees for 24 hours.
Slow fermentation, maintained at a temperature below 18 degrees Celsius, is carried out separately for each variety in stainless steel tanks, maintaining the separation by zones. Before final blending, the wine completes malolactic fermentation. The second fermentation takes place in the bottle at 9 degrees Celsius in the depths of the Pol Roger cellars, where the wine rests until undergoing hand-stirring, a rare practice in the Champagne world today.
Produced only in limited quantities, the Brut Rosé Vintage has spent 7 years in the Pol Roger cellars before being released to the market.
