Elaboration and aging
Predicador is made from the Tempranillo grape variety with a touch of Garnacha. The grapes come from vineyards between 20 and 35 years old, from 12 different plots. The harvest is done manually in 14kg boxes. Once the grapes are picked, they are transported to the winery within a maximum of half an hour to avoid oxidation. For the elaboration of Predicador, after careful destemming, the grapes ferment in truncated cone-shaped stainless steel tanks at a temperature of 19-24ºC for 7-10 days.
Finally, after vinification, Predicador undergoes 15 months of aging in French oak barrels previously used for one wine.
Tasting Note of Predicador
- Appearance: Predicador has a very intense cherry red color. High layer. Bright and with continuous tears that stain the glass.
- Nose: Intense aromas. Good black fruit accompanied by spicy notes and aging characteristics. Balsamic touches that denote freshness.
- Palate: Powerful entry in the mouth. Juicy and very tasty. Fresh and with good acidity. Mineral aftertaste. Long and very persistent.
Pairing
Predicador is ideal to accompany grilled red meats, game, sheep cheeses, and semi-cured cheeses.
It is recommended to serve this wine at a temperature between 17 and 18ºC.
