Production and Aging
Predicador is made from the Tempranillo variety and a touch of Garnacha variety. The grapes come from vineyards between 20 and 35 years old, from 12 different plots. The harvest is done manually in 14kg boxes. Once the grapes are collected, they are transported to the winery within a maximum of half an hour to avoid oxidation. For the production of Predicador, after careful destemming, the grapes ferment in truncated-conical stainless steel tanks at a temperature of 19-24ºC for 7-10 days.
Finally, after vinification, Predicador undergoes 15 months of aging in French oak barrels that have previously held 1 wine.
