Dominio de Pingus is a very small winery located 30 kilometers from Roa, in the province of Burgos. Its small production makes it one of the scarcest and most exclusive wines in Spain.
Psi 2019 is made with 93% Tinto Fino and 7% Garnacha varieties. Alcoholic fermentation takes place in large cement tanks, followed by malolactic fermentation and aging in the same tanks. Peter Sisseck is Pingus, an agronomist and winemaker born in 1962 in Copenhagen, who has been based in Spain since 1990, achieving since then that his wines are among the most highly valued in the world.
The Dominio de Pingus winery was created in 1995 and was a project that Sisseck had in mind for some time. Previously, he had worked with his uncle Peter Vinding Diers, one of the creators of the "new wave" of white wines from Bordeaux, in the Graves area. Previously, Sisseck had worked in California, alongside the prestigious winemaker Zelma Zong, which was an enriching experience for both.
Psi is ideal to accompany grilled red meats, stews, game birds, game meat, cured cheeses, acorn-fed Iberian ham, and red meats with sauce.
It is recommended to serve at a temperature of 16ºC.
