The Purple Bean, also known as the Long Purple Bean or red bean, is a medium to large sized legume, with a characteristic dark purple or purple color. Its shape is elongated, slightly flattened and kidney-shaped. Originating from Argentina, this variety is divided into two types: thelight red bean(or light purple bean) and thedark red bean(or dark purple bean).
When soaked, purple beans tend to lose some of their color, although the soaking water turns dark, which adds intensity to the broth in stews. Once cooked, these beans are characterized by their softness and creamy texture, making them ideal for a wide variety of traditional dishes such as stews and soups.
In terms of nutritional value, purple beansare an excellent source of plant-based proteins and iron, in addition to providing fiber and being low in fats. They are perfect for inclusion in balanced and healthy diets, providing flavor, texture, and nutritional benefits in every bite.
