The harvest is carried out manually and in small boxes, ensuring that each cluster arrives in optimal conditions at the winery. It is only harvested when the grapes reach their ideal alcoholic and phenolic maturity, thus ensuring maximum quality and aromatic purity. Before its production, the clusters go through two strict selections: the first one in the vineyard, where only the perfect clusters are chosen; and the second one in the winery, through a grain selection table, allowing to work exclusively with the noblest fruit.
The process continues with a pre-fermentation cold maceration for 24 hours, a technique that helps to extract color, fruity aromas, and tannic structure delicately. Subsequently, the wine undergoes its alcoholic and malolactic fermentation in 6,500-liter French oak vats, providing complexity, softness, and an unmistakable velvety texture.
The aging is extended between 12 and 14 months in French Bordeaux barrels, where the wine acquires its most elegant nuances: notes of cocoa, vanilla, sweet spices, and toasted hints that harmoniously integrate with ripe red fruit. Afterwards, it rests for a minimum of 10 months in the bottle inside the winery's cellars, where it reaches its optimum balance before hitting the market.
