Once in the winery, a cold skin maceration is carried out for 4 days at a temperature below 10ºC. This process allows for better extraction of aromas and colors, and ensures that they remain stable over time. The fermentation is spontaneous, without the addition of commercial yeasts, at a controlled temperature of between 24-26ºC for 8 days.

Subsequently, the wine macerates with the skins for 12 days, increasing the tannins and structure of the wine, giving it greater complexity and body. The malolactic fermentation takes place in stainless steel tanks, where the wine rests on its lees for a minimum of 12 months.
