Ron Dictador 2 Masters Ximenez Spinola

A 45-year-old Dictador rum from a 1976 harvest finished in whisky barrels was sent to Jerez de la Frontera, in the warm south of Spain.

There, the rum was matured for 9 months in 50-year-old French oak barrels of Pedro Ximénez.

TASTING NOTES BY CHARLES MACLEAN

Appearance: Deep polished palo santo, with crimson highlights. Slow, thick legs, indicating texture.

Aroma: A deep and soft sensation on the nose, which slightly dries the nose, the initial notes are Christmas pudding with burnt edges, with toasted almond flakes, becoming juicy and fleshy after a while.

The middle notes are both fruity (old Madeira) and floral - an intoxicating, perfumed fragrance of tropical lilies on a hot night. The base note is reminiscent of burnt caramel.

Palate: Creamy texture that fills the mouth and a generally sweet flavor, with molasses caramel on the mid palate and a hint of marinated wine and glazed pork. Then a perfumed finish, pleasantly refreshing in the mouth with persistent hot spice.

Comment: Rich, smooth and rounded, layered and complex, with each layer of aroma and flavor revealed in turn. Sensational! Provocative and worthy of long contemplation!
