This semi-cured goat cheese is handmade by Collados Quesería. It is extraordinary if you enjoy soft cheeses, but with unmistakable and incomparable flavor. The process used is that of a lifetime, pressing manually through a knotted cloth, which gives it its characteristic shape. Then it matures in the cellar for about 45 days, to get the texture and flavor that will make you have a cheese love at first sight
