Shiro Miso is a vegetable paste made from the fermentation of soybeans and rice, the process is quite fast, 2 weeks. Its flavour is mild and a little sweet. Due to its properties, miso is considered by experts in healthy eating and macrobiotics, a jewel of food. It is used in soups, broths, vegetables and legumes, but it is never cooked so that its enzymes are not destroyed. It is added at the end of cooking with the fire off. It provides us with live enzymes, favouring heavy digestions and the balance of the intestinal flora.
