Sierra Cantabria Cuvee is a single varietal of Tempranillo. Fermentation: Traditional elaboration, 100% destemmed. Alcoholic fermentation for 8 days with selected yeast, temperature control between 28 and 32 ºC. Maceration: Pre-fermentation cold maceration (48 hours) and post-fermentation maceration with the skins for 20 days. Vigorous pump-overs twice a day until fermentation is complete. During maceration, the frequency of pump-overs is decreased as the process progresses, to avoid the extraction of vegetal and bitter characters, ending with a gentle pump-over every two days.
Aging, Stabilization: Barrel: 14 months in Bordeaux barrels of French oak (40%) and American oak (60%) since November 2001. 4 months in new French oak barrel toasted "Medium +". Rackings every four months. Bottle: Bottled in May 2004.
Sierra Cantabria Cuvee is ideal to accompany red meats, roasts, stews, all kinds of game, well-aged cheeses, blue cheeses, and foie gras.
It is recommended to consume at a temperature between 14 and 16ºC.
