Cañón is one of our most significant cheeses. It takes its name from the town where our factory is located, La Cavada, where the Royal Artillery Factory, which since the 17th century became the main producer of this product, was located. And, of course, because it's amazing! It is a cow's milk cheese that contains vegetable ash inside. Its paste is compact, closed, sometimes with small regularly distributed eyes, but buttery and melting. This gives it a unique aroma and flavor of nuts with a residual taste of sweet cream, moving around its creaminess and softness. Our Cañón Cheese has won the following awards: Silver Medal at the 2023 World Cheese Awards.
