Dominio de Cair, the project of Luis Cañas in Ribera del Duero, began to take shape in 2008 and took shape with the construction of the winery in 2012. The property has old vineyards, some more than a century old, which offer low yields but full of character. The combination of these vineyards with a specially designed winery equipped with modern oenological technologies allows the production of high quality wines that fully reflect the identity of the area.
Tierras de Cair, a wine made with Tempranillo from various plots over 60 years old, located in high and low production areas. The grapes are harvested by hand in boxes, and once in the winery, the grapes go through a double selection table, both bunches and berries, before starting fermentation in oak vats. Malolactic fermentation takes place in new French oak barrels, where the wine matures for 24 months. Before reaching the market, it rests in the bottle for a minimum of 18 months.
