Production and Aging

In the winery, the movement of the grape is by gravity, without pumps, gently. The grapes arrive destemmed and whole in the tank. Malolactic fermentation takes place in tanks and in French oak barrels. Clarified with natural egg white.

Soils: Predominantly limestone soils, sandy loam with medium-sized stones and pebbles.

Aging: 12 months in 225-liter French oak barrels from different forests.

Tasting Note by Tomás Postigo

  • Appearance: Tomás Postigo has a cherry red color, intense garnet edges and bright.
  • Nose: Ripe red and black fruits such as plum, cherry, and blackberry, mineral notes like graphite combined with floral notes. Spicy with hints of pepper, subtle and blended with aromas of toasted oak. Chocolate sensation and balsamic background, consequently, a very attractive, elegant, and fresh wine.
  • Palate: On the palate, it is a wine with a great initial impact but its sweet and ripe tannins and creaminess make it a tamed, round, wide, and tasty wine. Retronasal loaded with aromatic nuances and flavors that remind us of toffee and cherries in liquor.

Pairing

Tomás Postigo is ideal to accompany meat rice dishes, beef, and grilled red meats. Optimal serving temperature: Between 14 and 16ºC
