Tomás Postigo is made with 88% Tinto Fino, 6% Cabernet Sauvignon, 4.5% Merlot, and 1.5% Malbec grapes, selected vineyards located between 750 and 1,000 meters of altitude and among 37 plots in 15 municipalities in Ribera del Duero.
This winery, without its own vineyards, carries out a selection process, in close collaboration with local farmers, of different plots and in different municipalities in pursuit of the best grapes.
In the winery, the movement of the grape is by gravity, without pumps, gently. The grapes arrive destemmed and whole in the tank. Malolactic fermentation takes place in tanks and in French oak barrels. Clarified with natural egg white.
Soils: Predominantly limestone soils, sandy loam with medium-sized stones and pebbles.
Aging: 12 months in 225-liter French oak barrels from different forests.
Tomás Postigo is ideal to accompany meat rice dishes, beef, and grilled red meats. Optimal serving temperature: Between 14 and 16ºC
