VERMOUTH Noilly Prat Dry is elaborated through a process that is practically the same as it has been used since the decade of 1850. Noilly Prat is made exclusively from white grape varieties cultivated in the area of Marseille, mainly Picpoul de Pinet and Clairette.

These produce light and fruity wines that are made in massive Canadian oak casks within the original warehouses.

The wine stays in these casks for 8 months, maturing and absorbing the taste of the wood, before being moved to smaller oak barrels for a year.

Here they expose themselves to the sun, the wind and the low temperature of winter, while the wine is slowly changing. The result is a dry wine, with a body and amber color, similar to Madeira and Jerez. During the year outside, from 6 to 8% of the volume is lost by evaporation, the "part of the Angels".
