The soil is made up of calcium-rich clay, which is noted for its ability to control the flow of water to the vine plants. In addition, the presence of small limestone stones scattered throughout the fields helps to reduce natural evaporation, which is essential during the summer period. The roots of the vines go deep into the soil in search of all the necessary nutrients, giving rise to wines with a great structure and full of aromas and flavours.
The grapes are harvested during the night and then the bunches are removed from the vines before they are immediately pressed. The juice is then separated and certain types, which include solid components, are cooled to 0°C for 7 days to stabilise them. This process enhances the flavours and aromas of citrus and exotic fruits.
Villa Moncigale Cicada la Légende is made in stainless steel vats and fermentations take place at low temperatures to maintain the freshness of the wine's flavours and aromas. Subsequently, the wines are aged for 3 months on their fine lees, gently stirred once.
It has a beautiful bright pale pink colour.
The nose is complex and very aromatic, with delicate notes of red fruits, raspberry, white-fleshed fruits, peach and white flowers.
On the palate, there is an overriding sensation of freshness and balance with crisp flavours and lovely substance, culminating in a mineral sensation and a saline note.
This wine is perfect to enjoy as an aperitif, as well as to accompany seafood dishes and raw vegetables served with black olive tapenade.
