Elaboration and aging

Viña Pomal Reserva is a monovarietal of Tempranillo (100%). Viña Pomal Reserva is characterized by a rather traditional winemaking process: after destemming and crushing, a moderately long maceration takes place and, after alcoholic and malolactic fermentations, the wines are racked and lightly clarified before being transferred to barrels. The wine spends 18 months in barrels; barrels that traditionally are made of American oak. In this process, 2 or 3 rackings are carried out, which naturally clean the wine, thus avoiding the need for further treatments.

After its time in the barrel, the wine spends two years in bottles before being released to the market.

Tasting Notes for Viña Pomal Reserva

• Appearance: Viña Pomal Reserva has a medium intensity garnet-cherry color. Hints of brick red.
• Nose: Elegant and intense. Red fruits and licorice notes appear alongside aromas of maturity and aging: spices, tobacco leaf, and vanilla.
• Palate: Expressive and very well balanced. It shows structure and elegance. Pleasant and long finish.

Pairing

Viña Pomal Reserva is ideal to accompany rice dishes with meat or vegetables, moderately strong cheeses, duck, and oily fish. It is recommended to decant this wine before consuming and serve it at a temperature between 16 and 18ºC.
