The harvest that takes place in the "Marco de Jerez", is of utmost importance for the production of Wine of Jerez Apóstoles Palo Cortado, when the grapes arrive at the winery, they are carefully pressed, without crushing the stems, seeds and skin. The must obtained from this first pressing is known as "mosto yema" and is the most delicate and elegant.
The aging of the must is done by the system of criaderas and soleras in American oak barrels. After fermentation and fortification, each wine ages in separate soleras where they mature before being blended. Then they go to the Apostoles solera, where the wine will remain until it is over 30 years old.
