The White Wine Pazo de Barrantes La Comtesse is a wine made with 100% Albariño grapes.
Winemaking:
Destemming of the clusters before entering the press, to avoid the transfer of herbaceous flavors from the stems. Slow and gentle pressing allows for the extraction of aromas from grapes coming from old vines. Once clarified, the clean must is fermented in a 3,000-liter French Allier oak vat with fine grain, for 60 days at controlled temperature (10ºC). For 4 months, it is kept in contact with its lees, in order to increase its volume and intensity in the mouth.
Aging: after fermentation and contact with lees, the wine remains in the vats for 12 months and another 10 months in concrete tanks.
