Ximénez-Spínola Exceptional Harvest is a white wine from D.O. Jerez produced by the Ximénez Spínola winery. It is a single varietal Pedro Ximénez.
The grapes used for Ximénez-Spínola Exceptional Harvest are harvested a few weeks after the harvest of the grapes used to produce the winery's flagship wine Ximénez-Spínola PX Añada. This allows the grapes to reach a point of ripeness.
Once in the winery, the must of Ximénez-Spínola Exceptional Harvest is fermented in stainless steel tanks with the skins.
It is then racked into American oak casks through which oloroso de Jerez has passed.
Finally, Ximénez-Spínola Exceptional Harvest is aged for about four months on its own lees with periodic battonage.
