This is one of the most consumed vegetables in the world. As a curiosity about the carrot and its orange color, we remind you that this color was the work of Dutch producers who selected varieties of different shades to give this color to honor the Dutch royal family, whose color tradition is orange
Perhaps the most remarkable property of the carrot is the one that refers to its antioxidants. In fact its orange color is due to vegetable pigments called beta-carotene, which makes it an incredibly great source of antioxidants
Carrots also have vitamin properties, by this we mean that the body transforms them into vitamin A, a vitamin necessary for healthy skin, healthy eyesight, for the necessary formation of bones, and also for fertility and reproduction.
As for the minerals that stand out in the raw carrot, these are calcium, phosphorus, magnesium, iron, potassium and iodine.
