This Gran Reserva is primarily made from Tempranillo grapes (90%) and 10% Graciano and Mazuelo, grown in vineyards aged between 60 and 65 years, located in Ábalos and Labastida, at an elevation of 600 to 700 meters, facing south to the Sierra de Cantabria. The harvest occurs in October under optimal conditions of warm, sunny days, allowing for high-quality grapes. The production process includes a two-day cold maceration, followed by controlled fermentation and a prolonged maceration of nine days in contact with the skins. This wine is aged for 30 months in American oak barrels and is then bottled and allowed to rest for 36 months in an underground cellar. It is a perfect companion for dishes where lamb is the star, as well as with red meats, elaborate sauces, pâtés, and aged cheeses. It is recommended to serve it at a temperature between 17°C and 18°C.
