Manually peeled and cut, produced without adding conservatives or acids to keep their original colour and flavor. The artichoke is considered the flower of the vegetable garden due to its distinctive shape. In Navarra, only the commonly called 'Blanca de Navarra' or White Navarra variety is grown.

This variety is differentiated from the others by its round shape and for having a round hole in the top because its leaves don´t quite grow together to close the head at the top. It´s also distinguishable for having a stem between 15-20 cm. long.
