Blue Sapphire by Verde Esmeralda is an organic extra virgin olive oil from the Picual variety, characterized by its personality, intensity, body and green color. This edition is presented in a 500 ml bottle, blue and shaped like an emerald-cut sapphire, within the Premium «Piedras preciosas» range. After the first night of harvest, reserved for the limited Luxury edition, during the six remaining nights the olives destined for Blue Sapphire and the rest of the Premium range are harvested and milled. Its sensory profile offers a very intense fruity character of green olive, with notes of fig tree, grass, stem, alloza, citrus and tomato plant. Nuances of green almond and artichoke are also described. On the palate it has a sweet entry, medium bitterness and a slightly more marked pungency, in a balanced whole. The Picual variety stands out for its early productivity, ease of cultivation and the high proportion of oleic acid in its oil. According to the description, the more intense fruitiness of Picual Organic compared with the conventional one is related to the exclusive use of organic products for olive nutrition.
