Astillero is an exceptional wine made by Bodegas El Paraguas from the blanco legítimo grape variety, known for being the oldest strain in Galicia. Sourced from the Fonte do Conde vineyard, positioned between 31 and 56 meters above sea level and consisting of clay soils with a granitic base, this wine captures the unique essence of its region. The meticulous production of Astillero begins with the harvest of selected bunches in small boxes, distributing 356 kilograms of harvested grapes. The vinification process takes place in a 500-liter stainless steel tank, where the grapes macerate with their skins for 7 months. This careful process allows for the extraction of all the character and complexity that make Astillero a remarkable wine. Visually, Astillero presents an appealing straw-yellow color adorned with subtle greenish reflections, inviting tasting. In the olfactory phase, distinctive notes of the blanco legítimo variety prevail, offering floral aromas and stone fruits intertwined with marked saline touches. Finally, in the tasting phase, it reveals a light mouthfeel, with high acidity and a well-defined Atlantic character, where its freshness is enhanced by the presence of fruity flavors that develop throughout the journey.
