Cava Mirgin Opus is a spectacular cava from a classified site, created by the prestigious winery Alta Alella. This exceptional sparkling wine is composed of 60% Chardonnay and 40% Pansa Blanca, using organic grapes from the Vallcirera area. The production process begins with careful extraction of the must through a very gentle pressing, followed by fermentation of the Chardonnay variety in second-year French oak barrels, while the Pansa Blanca ferments in modern stainless steel tanks. After four months, the blending takes place, applying the Méthode Traditionnelle Champenoise, followed by a minimum aging of 36 months in the bottle. The result is a cava with a brilliant golden color, aromas of ripe white fruit and flowers, hints of nuts, and notes of minerality and salinity corresponding to the region.
