The climatic conditions, characterized by above-average rainfall and high temperatures in August, have favored optimal ripening of the fruit, which is in excellent sanitary condition. The harvested grapes are of exceptional quality, with a perfect balance between alcohol content and acidity, and free of fungus and humidity. The grapes come from organic vineyards approximately 30 years old, and are harvested by hand and on trellises, alternating with mechanized harvesting in gravelly and sandy soils. The grapes, 100% Verdejo, come from Olmedo, Valdestillas and Segovia. Maceration is carried out at low temperature for 24 hours, followed by fermentation of the yolk must at low temperature to maximize the extraction of aromatic compounds.
It has a straw yellow color with greenish reflections and is brilliant. The nose is elegant and very intense, with herbal, white and stone fruit notes, as well as a spicy and citrus touch.
