Goyo García Beâtum Tinto blends the Mencía and Palomino Fino grape varieties, carefully cultivated in sandstone, clay and black slate soils, at an altitude of approximately 600 meters. The vines, witnesses of time with more than 100 years old, are carefully tended by hand hoeing. Harvesting is done by hand, selecting the grapes at their optimum point, then destemming the whole bunches and gently pressing the resulting must.
Fermentation takes place at controlled temperature for a couple of weeks, followed by cold maceration for approximately three months. Incubation of the wine takes place in French oak barrels a decade old, where it is aged with dedication for a year and a half.The process culminates with bottling, carried out without stabilization, filtration or fining, and without the addition of sulfites, thus preserving the purity and authenticity of the wine.
