Javier Sanz Finca Saltamontes is a unique and historic wine, sourced from a selected harvest of vines over 150 years old. It comes from El Pago de Saltamontes, on 2.27 hectares of pre-phylloxera vineyards, cultivated in the vaso method by the Sanz family for four generations. The estate, registered in 1863, signifies tradition and quality. The vineyards yield about 1,400 kg per hectare, allowing for limited but exceptional quality production. The harvest is done manually to ensure the quality of the grapes. The vinification begins with extracting its fruity potential, followed by a short maceration to perfect its aromas and freshness. Subsequently, the wine ages on its fine lees for several months before bottling. Tasting reveals a brilliant golden yellow color with a nose reminiscent of candied orange peel and aromatic herbs. On the palate, it is exceptionally smooth and creamy, with moderate acidity and a long, pleasant finish. This wine pairs perfectly with refined dishes, vegetables, rice, and fish. Roasted meats also make a good match. The recommended serving temperature is between 8 and 10 degrees.
