La Gabacha is a white wine made entirely from the Sauvignon blanc variety by the prestigious Casa Rojo winery. This wine has the Designation of Origin Rueda, known for its quality in white wines. The 2025 vintage was characterized by perfect climatic conditions, with ample rainfall and hot summers, allowing for optimal ripening of the grapes without fungal issues. The organic vineyard, planted in 1985, is located at an altitude of 800 meters, with a controlled production of 6,000 kilos per hectare. The winemaking process includes fermentation at low temperatures that preserves the varietal aromas and aging on fine lees for five months. Visually, the wine stands out with its straw-yellow color, clear and with golden hints. Aromatically, it features stone fruits like apricot and peach, along with citrus and herbal notes. On the palate, it is dry with good acidity, resulting in a fresh and elegant wine, ideal for pairing with seafood.
