Mezcal Los Danzantes Joven Coyote is a pure, artisanal expression from Zimatlán de Álvarez, Oaxaca. This mezcal is made with Coyote agave (Agave americana) grown in the Río Flor area, produced using traditional methods that highlight the authenticity and character of this drink. Under the expert supervision of Karina Abad Rojas, the process includes cooking in an underground conical wood oven using white oak, followed by milling with a horse-drawn stone tahona. Fermentation is natural, carried out in wooden vats with native yeasts, culminating in double distillation in a copper still.
