This privileged setting offers a unique microclimate and soils that enable the cultivation of high-quality grapes. Vineyard management focuses on producing balanced clusters with thick skins, reducing color extraction and enhancing aromatic concentration.
The harvest takes place early, at the end of August, to preserve the natural freshness of the fruit and avoid overripe aromas. After carefully chilling the grapes, a delicate pressing is carried out to extract only the purest juice, which slowly ferments at low temperature. The wine is aged on its lees for four months, adding complexity and volume.
Minami Natsu shows a pale yellow color with steely reflections. The nose reveals an intense and refined aromatic expression, with notes of white flowers, tropical fruits and a subtle mineral touch.
