Parajes del Valle Maceración Macabeo is a rosé wine produced by Bodegas Parajes del Valle with 100% Macabeo grapes under the D.O. Manchuela.
Fermented with the skins for 15 days, temperature between 18 and 22ºc. Light pressing and left on its lees for several months.
30 year old, dry-farmed, gobelet-grown plots. Selected clusters with smaller berries, to bring out the nuances. Density 1275 plants/hectare. Altitude 850m. Extreme continental climate, with great diurnal amplitude (over 20ºC). Clayey and calcareous soils.
Soft orange colour.
Notes of citrus and wild flowers.
On the palate there are notes of orange, lime, with a mineral touch, balanced tannins and acidity and a long finish.
Perfect with grilled sea bass or smoked fish.
