Sofia Noble is an exceptional sweet wine, considered one of the best in the Valencian Community and recognized for winning the best sweet award in 2019. This wine is the result of a careful blend of Sauvignon Blanc and Merseguera grapes, cultivated in the Merseguera vineyard in the Alto Turia region at an altitude of 1050m, and in the municipality of Fuenterrobles at 850 meters. These vineyards benefit from ideal conditions for the development of botrytis, thanks to their ability to retain moisture in the autumn. The viticulture is environmentally friendly, promoting the development of noble rot. The vines are 40 years old with a controlled yield of 7hl/ha. The harvest is done manually in 15kg boxes, ensuring the grapes are collected at their optimal ripeness, over 3 or 4 passes. In the winery, the must is gently pressed before fermentation begins. This process is controlled and slow, interrupted through 'mûtage' upon reaching the ideal balance, followed by aging in French oak barrels for 24 months. The production of Sofia Noble is limited, with only 1,500 bottles available, enhancing its exclusivity and uniqueness.
