Spanish White Guerrilla Verdejo 2017 is made from 100% Verdejo grapes, originating from the Denomination of Origin Rueda. This classic variety is valued for its resistance to adverse conditions, allowing successful cultivation even in challenging soils like the clay-limestone of this region. The grapes come from a young vineyard with a dense planting of 3,600 plants per hectare, grown in high trellis. Harvesting is done by hand during cool night hours in mid-September to preserve the freshness of the grapes. The winemaking process includes controlled fermentation at a low temperature around 11 degrees Celsius in a large stainless steel tank (10,000 liters), followed by two months of aging on fine lees in the same type of tank. The result is a straw-yellow wine with greenish notes, aromas of boxwood and tomato leaves, white fruits and flowers, and a fresh, glyceric palate, perfect for pairing with various dishes and enjoying at any time.
