This wine, the youngest from the winery, comes from 30-year-old vines cultivated at an altitude of 700 meters, contributing to its low yields and rich complexity. The harvest is done manually with a rigorous selection process both in the field and in the winery. Fermentation takes place over 8 days, with two pump-overs daily and a controlled temperature range of 26° to 28°C.
Subsequently, post-fermentation maceration occurs with the grape skins, applying gentle foot treading in a controlled temperature environment between 25°C and 26°C, followed by malolactic fermentation in stainless steel tanks. The wine ages for 16 months in French oak barrels of 225L, using 20% new barrels and 80% second-use barrels.
In tasting, the wine presents an attractive mature cherry red color with ruby reflections, showing good aromatic intensity with hints of black fruits, spicy notes, and tobacco leaf. Its entry on the palate is expressive and gentle, with good breadth and perfect balance, making it long and expressive, highlighting the sweetness and gentleness of its tannins alongside an acidity that brings freshness.
