Tierras de Cair is a prominent red wine made from 100% Tempranillo in the prestigious D.O. Ribera del Duero by the Dominio de Cair winery. This project, led by Luis Cañas, was established in 2008, culminating in the construction of the winery in 2012. The property hosts old vineyards, some over a century old, producing low-yield but character-rich grapes. The wine results from careful manual harvesting and a meticulous production process: the grapes are selected on double tables before fermentation in modern oak tanks. Subsequently, the wine undergoes malolactic fermentation in new French oak barrels, maturing for 24 months, followed by a bottle resting period of at least 18 months before hitting the market. In the sensory analysis, this wine presents an appealing aroma of ripe black fruits, complemented by balsamic touches and a mineral nuance. On the palate, it offers a pleasant volume that enhances the fruity presence, along with a menthol finish that feels fresh and elegant, making Tierras de Cair an exceptional option for enjoyment.
